Tahini Sauce
Tahini sauce always accompanies falafel; it's also traditional for dressing simple plates of fried, broiled or roasted fish. The sauce lends a platter of steamed or roasted vegetables a spark of flavor and richness they might lack on their own.SERVINGS: MAKES ABOUT 1 1/4 CUPS
1/2 teaspoon minced garlicIn a bowl, stir the garlic into the tahini. Add water, 1 teaspoon at a time, until the sauce has the consistency of thick cream. Add lemon juice until the sauce is pleasantly tangy and season with salt.

Fresh lemon juice
Salt
